What are Vegan Sausage Rolls?
Ingredients

8 ounces Vegan Feta Cheese, chopped (250 gm)

1/4 cup Linseed, Sunflower Seed, and Almond (LSA) Meal, or substitute with flaxseed meal

1 large onion, finely chopped

2 tbsp of fresh finely cut herbs (I use a blend of thyme, rosemary, and parsley)

1 1/2 cups walnuts, chopped

1/2 cup of blanched almonds
-
1 1/2 cups of rolled oats
-
1 tbsp of nutritional yeast flakes (Macro is the brand I use)

1 tbsp of textured vegetable protein
-
16 ounces of finely chopped white mushrooms (400 gm)

1/2 cup water
-
2 tsp of soy sauce or Tamari

3 sheets of Borg’s Puff Pastry (Borg’s brand at Woolworths is totally Vegan)
Directions
1. First, mix all the dry ingredients together in a bowl along with adding the fetta cheese by crumbling it in with your fingers.
2. Next, mix the liquids together and pour over the dry ingredients in the bowl.
3. Take a sheet of pastry and cut down the middle. Spoon the mixture evenly down the center of each portion, where the broken lines are in the illustration below.
4. Roll the pastry over the mixture so it is wrapped inside, forming two logs. Sprinkle sesame seeds over the top, then cut each of the logs into six pieces, making a total of 12 vegan sausage rolls. Poke a fork into each piece to allow steam to vent.
5. Bake at 350°F (180°C) for 20-25minutes or until brown. After they are baked, place them on a plate and serve with tomato or chili sauce, or they are good on their own, too. Jan’s Vegan Sausage Rolls can be put into a sealed plastic bag or container to freeze.
